    Apple Pie Coleslaw Recipe

    (serves 10)

    3 cups granny smith apples, cored and diced
    1/2 cup orange juice
    1 gal green cabbage, shredded
    1 qt carrots, shredded
    1/2 cup honey
    1/4 cup brown sugar
    1 tsp allspice
    1 tb cinnamon
    2 tb wheat germ
    4 tb champagne vinegar
    1/2 cup mayonnaise
    Salt and Pepper to taste

    Directions

    1. Place the diced apple in a bowl and pour over the orange juice. Toss to coat. Let the apples sit for 2 minutes then drain.
    2. In a large bowl combine the cabbage, carrots and apples. Set aside.
    3. In a separate bowl combine the honey, brown sugar, allspice, cinnamon, vinegar and mayonnaise. Season the dressing with salt and pepper to taste.
    4. Pour the dressing over the cabbage mix and toss well to coat.
    5. Serve chilled.
