Apple Pie Coleslaw Recipe
(serves 10)
3 cups granny smith apples, cored and diced
1/2 cup orange juice
1 gal green cabbage, shredded
1 qt carrots, shredded
1/2 cup honey
1/4 cup brown sugar
1 tsp allspice
1 tb cinnamon
2 tb wheat germ
4 tb champagne vinegar
1/2 cup mayonnaise
Salt and Pepper to taste
Directions
- Place the diced apple in a bowl and pour over the orange juice. Toss to coat. Let the apples sit for 2 minutes then drain.
- In a large bowl combine the cabbage, carrots and apples. Set aside.
- In a separate bowl combine the honey, brown sugar, allspice, cinnamon, vinegar and mayonnaise. Season the dressing with salt and pepper to taste.
- Pour the dressing over the cabbage mix and toss well to coat.
- Serve chilled.
