    Barley and Quinoa Salisbury "Steaks" Recipe

    (serves 6)

    3/4 cup yellow onions, diced
    3/4 cup green and red bell peppers, small dice
    2 tsp garlic, minced
    2 tb Worcestershire sauce
    2 cups, cooked barley, mash 1/2 and keep other half whole
    2 cups cooked quinoa
    2 cups Panko bread crumbs
    1/2 cup wheat germ
    3 large eggs
    1/4 cup dry oregano,
    1/2 cup parmesan cheese, grated
    Kosher salt and black pepper to taste

    Directions

    1. Combine all ingredients in a large bowl.
    2. Allow to sit for about 1 hour so everything has a chance to combine well.
    3. Form into 6 equal patties.
    4. Oil the grill then place the patties on the grill over a low heat.
