    Chicken Salad with Flax Seed, Cranberries, Red Flame Grapes and Shaved Celery Recipe

    1 cup low fat mayonnaise
    1 tb lemon zest
    1 lb of chicken, roasted (see roasted chicken recipe), diced up
    6 cups red flame grapes, cut in half
    1 ½ cups very thinly sliced celery
    ½ cup flax seed
    3/4 cup dried cranberries
    1/2 cup finely chopped red onion
    Kosher salt and pepper to taste

    1. Mix mayonnaise, lemon zest in medium bowl to blend. Season to taste with salt and pepper. Refrigerate 15 minutes.
    2. Toss the chicken, grapes, celery, flax seed, cranberries, and red onion in large bowl with the lemon mayonnaise and toss to coat.
