Chicken Salad with Flax Seed, Cranberries, Red Flame Grapes and Shaved Celery Recipe
1 cup low fat mayonnaise
1 tb lemon zest
1 lb of chicken, roasted (see roasted chicken recipe), diced up
6 cups red flame grapes, cut in half
1 ½ cups very thinly sliced celery
½ cup flax seed
3/4 cup dried cranberries
1/2 cup finely chopped red onion
Kosher salt and pepper to taste
- Mix mayonnaise, lemon zest in medium bowl to blend. Season to taste with salt and pepper. Refrigerate 15 minutes.
- Toss the chicken, grapes, celery, flax seed, cranberries, and red onion in large bowl with the lemon mayonnaise and toss to coat.
