    Tuna Salad Recipe

    (makes 6 servings)

    1/4 cup low fat mayonnaise
    ┬╝ cup extra virgin olive oil
    6 tb sweet pickle relish
    2 tb dijon mustard
    2 tb whole grain mustard
    2 ea 6-ounce cans solid albacore tuna packed in water, drained well
    2 tsp finely grated lime zest
    1/2 cup chopped red onion
    1/2 cup chopped fresh cilantro
    1 cup diced tomatoes, seeds squeezed out
    1/8 cup diced green chilies in can (2 oz can)


    1. Mix first 5 ingredients in large bowl.
    2. Mix in tuna. Add lime zest, onion, cilantro, diced tomatoes and chilies; mix well. Cover and chill for at least 30 minutes.
