    Vegan Mayonnaise Recipe

    (makes 16 servings/2 cups)

    ½ lb tofu, firm
    1/8 cup lemon juice, fresh
    2 tsp garlic, minced
    1 tsp kosher salt
    ½ cup olive oil
    1/8 cup water
    2 tsp dijon mustard


    1. Lay the tofu onto several layers of paper towels. Cover the top with more paper towels. Place a small pan onto of the tofu with a small weight (can of soup will work) and allow the excess water to press out. About 15 minutes.
    2. Place all ingredients into food processor and puree until silky smooth.
