Heart Healthy Applesauce Cake

Ingredients

  • Vegetable oil spray

  • 1/2 cup margarine (Benecol, Promise Activ or Smart Balance lower cholesterol)

  • 1 cup sugar

  • 2 egg whites

  • 1 1/2 cups applesauce

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon ground cloves

  • 1 teaspoon nutmeg

  • 2 teaspoons ground cinnamon

  • 1/2 cup raisins


Directions:

  1. Preheat oven to 350 degrees Farenheit.

  2. Lightly spray a 9-inch square cake pan with vegetable oil spray.

  3. In a large mixing bowl, mix margarine with sugar until fluffy.

  4. Add egg whites and beat well.

  5. Add applesauce and beat.

  6. In a medium bowl, sift dry ingredients together.

  7. Add to margarine mixture and mix well.

  8. Stir in raisins.

  9. Pour into prepared pan and bake 45 minutes.

  10. Serve warm and taste the heart healthy goodness!
