    Avocado Chocolate Chip Cookies

    1 3/4 c flour
    1/2 tsp baking soda
    3/4 tsp baking powder
    3/4 tsp salt
    1/4 c butter
    1/4 c mashed avocado (no chunks)
    1/2 c brown sugar
    1/2 c sugar
    1 tbsp flax seed mixed with 2 tbsp water
    2 tsp vanilla
    7 oz chopped dark chocolate

    1. Preheat the oven to 350┬║ F
    2. Combine the first 4 ingredients in a bowl
    3. In another bowl, combine the butter and avocado to make a smooth creamy mixture, then add the sugars, flax seed mixture, and vanilla to combine until the ingredients are well incorporated
    4. Add the dry ingredients and mix well
    5. Add the chocolate and mix, then refrigerate the cookie dough for an hour
    6. Scoop the cookie dough and place evenly on a baking sheet, flattening them slightly with your hand
    7. Bake for 10-15 minutes (more or less) depending on your desired consistency

    (Some variations of this recipe substitute butter for vegan butter substitutes and flour for Gluten Free flour, so depending on your dietary restrictions you can adapt the recipe)
