Carrot Cake

Ingredients

1 1/2 cups salad oil (such as vegetable or sunflower oil)
3 cups of carrots, grated finely
2 cups sugar
4 eggs
2 cups flour
1 1/2 teaspoons salt
1 1/2 teaspoons cinnamon
2 tablespoons baking soda
1 cup chopped walnuts
You can also add crushed pineapple, raisins and coconut if you want.

Directions

Mix oil, sugar, and carrots well and beat eggs in one at a time. Add flour, salt, cinnamon, baking soda, nuts and any optional ingredients. Pour into a 9-inch by 11-inch pan and bake at 325 for almost one hour.

Frosting (for carrot cake or other):

6-8 ounces of cream cheese
1 stick butter
1 pound powdered sugar
2 teaspoons vanilla

Beat well and you have frosting!
