Cheesecake

Ingredients

Crust:
1 1/2 cup graham cracker crumbs
2 tablespoons sugar
3 tablespoons butter

Pie:
2 packages (8 ounces each) plus 1 package (3 ounces) cream cheese, softened
1 cup sugar
Grated peel from 1 lemon
2 teaspoons vanilla
3 eggs

Topping:
1 cup sour cream or can of cherry/strawberry glaze

Directions

Heat oven to 350. Stir together graham cracker crumbs and sugar. Mix in butter thoroughly. Press mixture evenly in bottom of 9-inch pie tin. Bake for 10 minutes. Let cool.

Reduce oven temperature to 300.

Beat cream cheese in large mixing bowl. Gradually add 1 cup of sugar, beating until fluffy. Add lemon peel and vanilla. Beat in eggs, 1 at a time. Pour over crumb crust. Bake hour until center is firm. Cool to room temperature. Spread sour cream and/or glaze over top. Chill at least 2 hours
