Cucumber Salad
Ingredients
5 medium Kirby cucumbers
2 small onions
1 cup white or cider vinegar
Salt
Directions
Peel cucumbers and slice very thin. Salt generously in a large non-metallic bowl. Weight down and let stand an hour.
Drain cucumbers, mix with onion and pour vinegar over the top.
Let stand 10 minutes before serving.
