Spinach Soup

Ingredients

1 pound spinach, cooked and well-drained
1 pint creamed cottage cheese
2 eggs, beaten
1/2 cup parmesan cheese, grated
1/2 cup flour
1/2 teaspoon seasoned salt
1/2 teaspoon black pepper, fresh ground
27 oz. chicken broth
2 cups water
2 chicken bouillon cubes
1/2 cup butter

Directions

Drain spinach well, chop. Press cottage cheese through a medium sieve into a large bowl. Add spinach, eggs, parmesan cheese, flour, salt and pepper, mixing well. Bring broth, bouillon cubes and butter to a boil in a large saucepan. Stir in spinach mixture, blend thoroughly. Bring to boil, then simmer for 30 minutes, stirring occasionally. Serve warm with sour cream and paprika on top.
