    Sweet Potato Soufflé

    Ingredients
    1 large can of sweet potatoes (mashed)
    1 can of coconut milk
    1/2 cup brown sugar
    1 beaten egg

    Preparation

    1. Mash the sweet potatoes.
    2. Mix mashed sweet potatoes with coconut milk, brown sugar and egg.
    3. Spray a soufflé dish or 9x9 square pan with PAM, so the soufflé will not stick.
    4. Bake at 325 degrees for 1 hour.
    5. Serve as a vegetable with dinner or dessert.
