Sweet Potato Soufflé
1 large can of sweet potatoes (mashed)
1 can of coconut milk
1/2 cup brown sugar
1 beaten egg
- Mash the sweet potatoes.
- Mix mashed sweet potatoes with coconut milk, brown sugar and egg.
- Spray a soufflé dish or 9x9 square pan with PAM, so the soufflé will not stick.
- Bake at 325 degrees for 1 hour.
- Serve as a vegetable with dinner or dessert.
