The investigations continue, but are being done on coconut oil rather than coconut meat. Some studies show coconut oil to be a neutral or protective saturated fat since it is medium chain triglyceride length and behaves differently than saturated animal fats which are structurally different (long or short chains). We do not promote using coconut oil to prepare foods until further studies can be done. However, coconut flesh, when eaten as a part of a varied and balanced diet may not be a cause for concern. Moderation is recommended until there is a better consensus among experts.
